Pork & Fennel Sausage Roll



It may look simple, but this is certainly not your regular corner shop sausage roll. 

The folks at Bourke Street Bakery sure are masters in their field, setting the bar for great pastry and fresh bread (the coffee is really good too). You get a warm, wholesome feeling from the wall stacked with loaves of bread, the homemade sweets and of course, the unmistakable smell of baking. 

I wasn't sure how a sausage roll could make it onto the 100 Sydney Dishes to Try Before You Die list but when I tried it, I understood. The pastry was buttery and flaky, and the moist filling had quite a complex flavour. It was fresh, and far from tasting fatty or heavy. 

All in all, I think the charm of this dish was in its simplicity and improvement on a classic, which means I will probably never be completely satisfied with a regular sausage roll again.
